We take the time to dry-age our beef because we believe in delivering the best flavor and texture possible. This temperature controlled process creates a better, more tender steak-- without the nitrates.
We treat our locally sourced, hand selected calves with the upmost respect. They enjoy a free-range, free-choice diet that is a mixture of grass, greens, and grains all grown right here on our farm.
We administer antibiotics only when medically necessary and never with the intent of growth promotion.
All products are USDA certified, butchered by masters, and are shipped frozen to lock in flavor in a Styrofoam freezer kit filled with dry ice to insulate your beef so it can be kept frozen for up to a year. When your vacuumed sealed, sous vide ready packages arrive, you can be certain of freshness and food safety.
We buy our calves from local Indiana farmers and finish them on the rolling hills of our Whitewater River Valley farm. They spend as much of their time in the pasture as possible. However, during the winter months, we bring them into our bedded, open-air barn.
Our cattle begin eating limited grain and all of the grass they desire. Over time, they gradually move toward being able to eat all the grain and all the grass they desire. Every morsel of grain and every blade of grass they eat is grown on our farm.
Your beef is picked up from the farm, butchered and then hangs for about 14 days to age before it is cut. It is USDA inspected, packaged, and frozen for transportation to your home. All of this occurs in an inspected, certified facility, so you can feel assured your meat was carefully prepared.
Our beef is naturally processed, meaning nothing is added to the beef during processing. We trim the fat closely and then grind the beef and all of the marbling within. We do not add fat, water, color, etc. to the ground beef.

When you place an order, we will contact you to confirm and arrange the pick up or delivery. For our smaller orders, we keep beef on hand for shipping. If we run out of a cut or you order a quarter or more, it typically takes about 2 to 3 weeks to butcher, age and package your beef. We work hard to fill our orders quickly, however when it comes to producing quality tasting beef, this is not a process we want to rush.
You can pick up on our farm. Call us to organize a special delivery.

We work closely with our veterinarian to help prevent and manage illness. When an animal gets sick, we administer antibiotics to help. We strictly adhere to all FDA requirements as it comes to antibiotic administration. We use the least or lowest dosage necessary to ensure the animal's health and recovery. At the time of butchering, all beef are free of antibiotic residues as is required by the FDA. We do not use antibiotics with the intent of growth promotion, as our cattle do not receive hormone treatments.
